So I installed the UI mod, along with Larger texts. The texts are fine but everything else is way too small. My laptops native resolution is 1920x1080. I dont think I'm going to be able to play at this resolution. What should I bring it down to?

That depends on the: eye sight, distance from and the size of the monitor ?
16/9:
960x540
1024x576
1280x720
1360x768
1600x900
1920x1080
2048x1152
2560x1440

It's right on my lap and I have my contacts in Yessir, 15.6" monitor
I will give those a shot.

So I brought it all the way down to 1280x720, but it doesn't really seem to be affecting the size of the UI just the game. The inventory screen, and the menu when you right click is still very small.

The UI should be proportionally larger, of course the 1920x1080 -> 1280x720 is only x*1.5, there's also a fact that the graphical card can re-adjust the used program to display on a larger resolution(making the difference to be non), and to fix that, you need to disable the GPUs engaged auto feature. I'll try to find the link to the instructions at some point...
Edit, here it is. Yes, it also adds the black borders, so the 1280x720 resolution is displayed in the center of a 1920x1080 resolution picture, and that's very noticeable.
