Is there a way to only install fully finished things from the UB mod?
When I was playing through the game, I came across a number of weird things that I couldn't fully finish. At first I thought it was me, but then I realised it was probably a bit of re-added gameplay that was never 100% finished.
Sorry for not being able to remember any specifics!

I am pretty sure that everything in UB is "finished"?
Unfinished Business is just the title, and refers to things the original developers didn't finish that Qwinn has restored or completed.

The only thing I would describe as "incomplete" is the Rakechaser/Pendent of Yemeth quest. But only because it's buggy if you don't do it exactly how it's supposed to be done, and there's basically no incentive for completing it, and it's introduced in a strange way.

Well I'm specifically thinking of first-time players, you see. (See my sig.)
The Pendent of Yemeth quest has never completely worked for me. I've encountered weird issues surrounding it. I remember being confused as to what I was supposed to do. I think I managed to complete it once, but it wasn't all that clear that I had, because the chap who challenges you to a fight was still there. It was all very confusing an unsatisfying. I think it's great to have that stuff so people can see it, but I don't think that's a great experience for a first-time player. Similarly, Morte's expanded dialogue in the Mortuary works against a new player. The original dialogue was trimmed down to introduce the player to world at a pace that didn't overwhelm them, and it works well for that purpose.
I also had an issue with the Candlestick quest where I was left completely stranded in a location, unable to leave.
I think it might be preferable to have a choice to install each of the 18 restorations, rather than having to install everything. Some of them are of more interest/relevance to the seasoned player.

Huh! Well it seems you CAN specify which mods you want to install -- provided you say NO to the "Recommended Components". That's fine then. Hurrah!

Ah, yes, I forgot about the semi-buggy portal in that quest...it's not that it doesn't show up full stop, but rather it seems as if its trigger either does not shoot off 100% of the time, or its trigger area is really, really small, as I know what you're talking about, and thought the same thing. If you keep running around the room, though, it'll eventually appear.
