For some reason, she now can instantly heal herself (no matter how much damage we do to her, when she disappears and re-appears, she is suddenly fully healed).

I am not playing with any mods at all that alter her.

I thought maybe it could be SCS or aTweaks but since you have neither installed...

I found a sneaky way to kill her... summon a bunch of creatures (I made 5 skeletons using viconia's raise undead spell) and when they go to attack her, move out of combat and rest... while you rest they will go through combat and after doing this a few tims, she will die. it was either that or she ran out of healing spells sometime while I was resting.
