Have all-new dungeon areas been created for BG/IWD/PST, by using a level editor for another (3D) game and taking screenshots? Now, I don't know how advanced are the editors for related games such as NWN, so I can't say; I was thinking more about editing for something like Doom 3, whose dungeon/hell level's style fits well with the darker parts of BG2 (Watcher's Keep, Underdark), flying above and taking screenshots.

Taking screenshots in such a way to match them together sounds rather challenging and laborious though, unless you can finely control your viewport's coordinates or capture the entire level in a single huge picture...

Making the map backgrounds is easy enough (via screenshots, bitmap exports or whatever). The tough part is making the wallgroups (IE .wed files) and other stuff. See this topic though for some attempts with other games and tools.
