I see a few EXP cap removers out there and knowing how sensitive this game is with compatibility between mods, I'm just wanting to be careful about which one I use. I currently have installed BGT, bot fixpacks and both unfinished business mods, widescreen mod, and some mods in the Big Picture.

Which Experience cap remover should I go with?

You probably have miss understood the notes about the compatibility... the XP caps are game rule tweaks... with all should be compatible with all the previous mods. So the answer to the question is, which ever you like the most. Remember that that won't allow you to normally advance beyond the level 40... to which you you need the level 50 ruleset... as it's more than 1 table.

I really like the component which removes the XP cap in the BG2 tweak pack over at Gibberlings Three. Not only does it perform as expected, but it also has a whole bunch of nifty components I greatly enjoy and can't play without (Remove Helmet Animations, More Interjections, Gradual Drow Item Disintegration, Delay High Level Abilities, Bottomless Bags of Holding, Unlimited Ammo Stacks, Jewelry and Gem Stacks, Potion Stacks, Scroll Stacks, Neutral Characters Make Happy Comments at Mid-Range Reputation and so on and so forth). The best part is that you can peruse the readme first and pick and choose which components you want to install.
