I'm looking for an RPG that allows me to fully customize my entire party (picking out class and stats myself, that sort of thing) rather than just one character.  It also needs to have a functional interface (so that rules out Wizardry) and I'd like to actually see the characters (also rules out Wizardry).  So basically something like Planescape: Torment or KOTOR, but where I can customize the whole party.  Got any suggestions?

In Icewind Dale I & II you can customise your entire party, but they're more hack'n'slash games with RPG elements. They're excellent games nonetheless, though. :)

You can also customize the entire party in both BG games with a small bit of hackery: start a multiplayer game with all 6 characters created by you and then copy the save directory to the single player saves folder.

You can also just play in multiplayer, but the above saves the hassle of creating a session everytime you want to load your saves.

Temple of Elemental Evil, if you can find it. I'm sure there are people who will argue about the functional interface requirement, but it is playable. You can create all party members yourself, though there are some recruitable ones around.

NWN2: Storm of Zehir Expansion. Initially you can create a party of four. There are various recruitable NPCs around who can be added or who can replace initial party members, with a maximum party size of six.

Alternatively, once you have a full party of Biowares you like, just use Shadowkeeper to swap them around to what you like.
That way you don't miss out on any interaction :) and its fun.

LevelOneNPCs if you want them to be the same each new game (but altered to what you want, obviously) which means you don't have to spend the time playing around with SK, and you still have the option.

I'll take a look at everyone's suggestions.  While I'm at it, can anyone suggest another game with a story on par with Planescape: Torment?  It's one of the better stories (and presentations of a story) in a game that I've come across, along with Grim Fandango and maybe The Longest Journey.  It doesn't depend too heavily on plot twists to keep me interested (the way most games with "GR8 STORIEZ" do), rather, the characters are great and the issues the story gets into (taking responsibility for your past despite having changed, that sort of thing) are really interesting.
