I do have NI but have never used it, how would or could I manually edit Imoen to fix this if necessary?
Imoen has evoker restrictions when dualed to mage

When I try to dual Imoen to mage she has the spell restrictions of an evoker but doesn't get the specialist bonuses (which might make it worthwhile). I had the Nalia/Imoen component of NPC kitpack installed but the first time I tried to dual her I got a CTD so I uninstalled those components. I'm attaching my weidu log in case some other mod is causing the problem.

I have absolutely no idea what to do with the WeiDUlog, but with shadowkeeper, you should be able to change the class from evoker to whatever you want, even when dual-classed.
After an eternity away from you all, I've returned.

She cannot be an Evoker by default. Compare her stats and the Evoker requirements. Also, only gnomes can specialize as illusionists in the second mage class (according to core rules). Obviosly, you can tweak this if you want.
